Catching Up: 31, 32, 33

Sorry... Been so busy and kind of sick of posting my food :) I cannot remember Wednesday, but I didn't stray from eating paleo.

Thursday: Jadon's last day of school and his beach party :( So bittersweet. For breakfast I had some smoked salmon with a hard-boiled egg, avocado and red onion. For lunch I had more smoked salmon, but this time from Jon's fish market, and some smoked mahi-mahi. For dinner at the BBQ I had a burger patty with some ketchup and mustard and a couple of pieces of fruit. Then for a late night snack I had a turkey avo on a romaine leaf. Thrilling :)

Friday: For breakfast I had a hard boiled egg, a nectarine and a spoonful of sunflower butter. Lunch: Carnitas with salsa, onion and cilantro. Dinner: Steak, asparagus, zucchini and chicken. I must confess... I took a pinch of bread and dipped it in a spreadable cheese. I needed one bite!!!!!! Ah! There was chips and candy and CAKE all over the place yesterday and I didn't touch a thing. I buckled tonight. My first cheat throughout this whole process that wasn't a cheat meal. I know it was just one bite, but I guess it still counts...?

Day 29 and 30

Monday:
Break: 2 turkey sausage patties and an egg
Lunch: Spaghetti squash with marinara and leftover meatballs
Dinner: Yum! Had New York steak with broccoli, onion, garlic and some liquid aminos (soy sauce substitute). Also made a shrimp, avo, mango, onion and lime juice salad.



So good. Jadon LOVED this dinner and had seconds. I gave him some french bread and butter to go with dinner.

After dinner I made a cobbler with fresh peaches!



I got the recipe from www.elanaspantry.com. What a great site! Thanks Kim.

Peach Crisp
6 large peaches, sliced
1 tablespoon lemon juice
1 tablespoon vanilla extract
3 tablespoons arrowroot powder
1 ½ cups blanched almond flour  (I used coconut flour)
1 teaspoon celtic sea salt
1 teaspoon baking soda
½ cup grapeseed oil  (I used walnut oil)
¼ cup agave nectar  (I used honey)
  1. Place peach slices in a large bowl, sprinkle with lemon juice, vanilla and arrowroot; toss to incorporate all ingredients
  2. In a smaller bowl, combine almond flour, salt, baking soda, grapeseed oil and agave for topping
  3. Place peach mixture in a 3 quart baking dish
  4. Crumble topping over peaches
  5. Bake covered at 350° for 1 hour, until peach juice is bubbling; remove cover and bake a few more minutes until topping is golden brown
I had mine with a scoop of coconut milk ice cream..




Tuesday:
Break: Leftover turkey sausage patties and a hard boiled egg.
Lunch: Was gonna make turkey-ceasar lettuce wraps, but decided to go to Los Golondrinas instead. I ordered a 1/2 lb. of carnitas with onion and cilantro on top. I only ate half, but I added some green salsa and a half of an avocado when I got to the office. Soo good.

Day 27 and 28

Saturday:

breakfast: I ate eggs and bacon while I watched Jadon eat my FAVORITE from I Love Bagels: A veggie sandwich. So jealy.

lunch: made some meatballs with ground beef, white and green onion, garlic, fresh rosemary and some other fresh herbs. I dipped them in a bit of ketchup (not sure how ketchup is part of the diet, but I'll take it). Inspired to get up and cook by watching "Giada at Home." I love her. She was making Greek meatballs with couscous in them. I have to say I am very sick of cooking and doing dishes though :)

dinner: smoked salmon with a bit of cocktail sauce and some prawns from Jon's Fish Market in the DP Harbor. dessert: raspberries.

Sunday:

breakfast/lunch: just snacked around on a meatball and some berries and fruit. I was kinda waiting to eat after 4pm so I could have my "cheat night."

dinner: Made it out to the grocery store at 3:30pm to buy some french bread and cheese. I have been really missing cheese. It was amazing. Then I had a few BBQ Pop Chips and a Hansen's soda. And a slice of zPizza. And Yogurtland. Wow.

I kinda went all out! I did however, weigh myself right before I put all of this junk food down and I lost another pound. For a total of 8 lbs in 28 days. That is actually pretty amazing! I am now 9 lbs away from my goal weight of 115 lbs. Which is 2 lbs more than what I weighed in high school. Aiming high... or low :)

Well, back on the wagon tomorrow!

Day 26

breakfast: tried something new. Bacon souffle frittata from the primal cookbook. Mine obviously didn't come out how theirs did. waste of bacon :)






Lunch also from the primal cookbook: Fried cauliflower "rice." Pretty good, would make again...



Dinner: New York steak, avo and salad. Dessert: Blackberries and sunflower butter. Kind of tired of blogging my food.. Not gonna lie. Good thing I am halfway done :)

Day 25: Halfway there!

Breakfast: Oj, almonds

Lunch: Salad with salmon, avo, mini heirloom tomatoes and lime juice.



After work I made some (either turnip or radish.. seriously get the two mixed up) with onion, rosemary and a bit of pastrami. Those things are SPICY! Yuck, no bueno. Loosely based on an idea from my primal cookbook.



Dinner: Shrimp ceasar salad.

Day 24

Ok, so today I was totally out of groceries and ended up eating out for lunch and dinner. After dinner I stopped by Farm to Market to pick up a few things for the rest of the week. Still need to buy my proteins...

For breakfast this morning I had some tea with a bit of raw organic honey. I bought a jar of this a while back at Wild Oats. Friggen $10!! I also had the last little bite of my banana bread and some blueberries.

Lunch: Chicken Fajitas with guacamole.



After work I took Jadon shopping for a tie to wear to his 5th grade dance/celebration. So darling. He only has 6 more days of elementary school left :( Bananas. We drove by our favorite Sushi Plantation on the way home from the mall and decided to stop.



As soon as I sat down our waiter, who knows us very well, said, "Sexy Girl for you tonight?" My favorite roll in the WORLD is called "sexy girl." Shrimp, jalapeno, avocado and mango on top. I had to say no and ordered a poke salad instead. Then he brought out some edamame and kindly said, "this is on me." Ahhhh! Jadon grabbed the bowl and said, "too bad you can't have any!" Such a booger. The poke salad was good though. There was about 5 little crunchy sprinkles that I know aren't paleo. Oops

Day 23

I just went through my Primal Blueprint cookbooks and bookmarked some stuff to cook up this week. I'll have to go grocery shopping tomorrow...

For breakfast today I had some of my banana bread and some tea. The bread tastes so much better heated up! I had a few almonds with dried cranberries for a morning snack. I feel like I have been eating a lot of nuts and not enough veggies. So I will have to be more conscious of that.

For lunch I had some leftover cabbage with some garlic & herb chicken sausage:



And Jadon wanted Taco Tuesday for dinner so.... I made some chicken tacos. Jadon had the regular version and I subbed out the tortillas and cheese for romaine leaves and hot sauce. Pretty tasty. Oh, and I had a small carton of raspberries.


I am almost halfway done with the 50-day challenge. I guess I should step it up and try and exercise more. I have been taking walks in the harbor, but that is not cutting it! I am going to try and get out this week and go stand up paddling in the harbor. Hope I don't run into any Mako sharks! Yikes!

Day 21

I needed a little confidence boost this morning... My weight has been stuck for the past week or so. Haven't lost a pound. I'm still at a 7 lb loss from when I started though. So I decided to compare my measurements now to what they were when I started. I lost at least in inch on all of them. So that's good I guess :)

This morning I had a hard-boiled egg, some almonds and a small yam with cinnamon and honey. Kind of a cluster! I will probably have a salad with some chicken sausage for lunch. After that we are headed up to my cousin Mandy's house to celebrate her high school graduation.

I fully intend to do the "eat whatever you want after 4pm" for the cheat meal rule. I think we are going to stop by the Dutch market on our way up, and I am hoping to still go to may favorite Baja Fish Tacos for dinner when we get back in town.

Day 20

Breakfast: eggs, carne asada, green onion, avocado and salsa


Lunch: made some Paleo banana bread. Complete success! It tasted good and Jadon loved it. I had it with sliced banana and honey...




Banana Bread
 3 eggs, separated
 1/4 c honey
 1/4 c olive oil
 2 small bananas or 1 large banana, mashed
 1 t 100% vanilla essence
 1 1/2 c almond meal
Preheat oven to 350 F. Cream egg yolks and honey in a large bowl until light and fluffy. Add
oil, vanilla essence, mashed banana and almond meal, combine well. In a separate bowl,
beat egg whites until stiff peaks form. Fold into banana mixture.
Line a loaf tin with baking paper and poor in banana mixture. Place in oven for 20-25
minutes or until cooked. Test by inserting a knife into the middle of the loaf. 




Dinner: Ground turkey lettuce wraps. Another success. Jadon ate 5 of these! I seriously feel like I have been cooking and doing dishes all day! In between I managed to watch the USA mens soccer team get beat by Panama (Boo! My voice hurts from yelling!) and we went to the movies to see Super 8. Such a good movie :)

Day 17

For breakfast today I had my favorite turkey-caesar-lettuce wraps and some nuts. I actually was researching paleo online today and read that I shouldn't be eating cashews! A little surprising, but good to know.

For lunch I made an Italian salad with organic baby greens, avocado, some Italian deli meats that I cannot pronounce and some brushetta from Trader Joe's. The brushetta had tomatoes, artichoke hearts and olives in it. Pretty tasty.



I also had some very colorful steamed broccoli and cauliflower.



I was craving some ribs for dinner so I went to Costco to scope out the situation. I ended up buying some ribs (that I will make tomorrow night when Jadon will be home, because he loves ribs). I also bought some chicken to make a chicken caesar salad for dinner.



When I was at Costco I found the deal of the century:



SIX hearts of romaine for $2.79. Crazy right? At Traders you get 3 for $2.99. I hope I can eat them all before they go bad. It shouldn't be a problem. I'm kind of obsessed with romaine leaves. You can use them for so much and the crunchiness is kind of addicting. How sad. I'm addicted to crunchy lettuce.

Day 16

Breakfast: same as yesterday.
Lunch: same as yesterday.
I snacked on a pear and some trail mix, went for walk in the harbor then cooked up this yummy shrimp salad:



Shrimp, romaine, green onion, avocado, salsa, yellow zucchini and lime juice. I have some leftover Hanson sodas from my cheat meal Sunday. Note to self: only buy one serving of your cheat meal so you don't have it staring in your face everyday!

When I was at Trader Joe's the other day I bought some almond meal. I saw a recipe for banana bread somewhere that calls for it. I am going to try and make that tomorrow!

Dinner Day 15



I didn't really have time to sit down for dinner tonight... After work I hit the book store and then Jadon had a violin concert. I just kinda snacked when I could. I had a little bit of Trader Joe's yummy organic beef jerky, a bite of soup, a sausage, acai juice and some fruit. I have all of this leftover pizza just sitting in fridge. I should probably just bring it to the office tomorrow.. I would be gone in .2 seconds :) Nobody here needs it! I know it is sad, but I am already planning what my next cheat meal will be. There is a really good Peruvian restaurant that just opened a new location in San Clemente called Inka Mama's. So bad, but soooo good. I may have to go this weekend.

Oh yeah. I have to give a little shout out to my co-worker Andrea. She has agreed to to this with me TWO different times. I even set up a blog for her and, nothing. Andrea, if you are reading this... GET ON THE TRAIN, WHAT ARE YOU WAITING FOR?!!!! No more excuses

Lunch

Last night I made some chicken soup with cabbage, carrots, celery and onion. I know it looks like it is from 1979 but it was good. Jadon even liked it!

Cheat meal!

Costco pizza and yogurtland! The pizza was seriously just ok... Believe it or not. Yogurtland was amazing!!!!! Ahhh! I had almost 2 pieces of pizza then I felt so full. A feeling I haven't felt in a while. Really is such a huge change. Goodnight!

Day 14 Breakfast



Yeah! I successfully made a poached egg :) Last time I tried it was a disaster... I slept for about 11 hours last night. That wine put me out! For breakfast I had a poached egg, some chicken/apple sausages from Trader Joes and leftover veggies. Jadon had some sausages, a peach and an orange. When he was done I told him that he just ate a paleo breakfast. He wasn't sure what to think of that and just replied, "Well, it's just the dinners that suck."

Dinner: day... I forgot

Went out with the girls. Ordered the poke with lettuce instead of wonton chips AND two glasses of wine. It is HARD to get buzzed and then not eat some carbs to soak it up. Still holding out on my cheat meal: Costco pizza tomorrow night with Jadon! Cannot wait!

Day 13 Lunch

I had some blueberries and a peach for a morning snack.



Then I had asparagus, onion and mushrooms cooked in coconut oil... served with ceasar salad with roast beef and avocado. Yum! Love that salad dressing...

Day 12 dinner and day 13 breakfast

Had so much fun at the LA Galaxy game last night! But I didn't want to waste my cheat meal on a hot dog so I waited til I got home at 11:30pm to eat dinner. I had some yummy chile verde from the crock pot with lettuce, avocado and lime juice. Then for breakfast: some bacon and eggs. Now I am just reading my "primal blueprint" book and having a garage sale!

Day 12 lunch

Day 12 breakfast

Ok I know your not supposed to weigh yourself everyday but I've lost 7 lbs :) And it's only day 12! For breaky I had a coconut pancake with blueberries. For some reason the pancake tasted a lot better after a night in the fridge. The blueberries really helped too. I brought some apple slices that I will eat with sunflower butter for a morning snack. We have an edit meeting at one of my favorite places in San Clemente this morning. Not excited about going there and missing out on my favorite Chinese chicken salad.

Update

Jadon walked upstairs and said it smells good. I told him that I made coconut pancakes and offered him a tiny bite. He couldn't even swallow it. "How could something that smells so good taste so awful?!" Hhahaah

Day 11: Lunch and Dinner

I had my leftover fajita salad for lunch today. Then after work I took Jadon shopping at H & M for an outfit to wear to his 5th grade dance. So adorable! He is styling. We stopped at In-N-Out on the way home. I ordered a hamburger protein style. Here is a picture of my wimpy deal next to Jadon's double-double.



I got to watch Jadon munch on his yummy CHEESEburger and fries. My burger was pretty good...once I got through all of the lettuce. When we got home I decided to try and make something from my new cookbook:



I made the coconut pancakes. Mehhhh.



Coconut flour just isn't the same as regular. I topped it with some raw honey, peach slices and coconut milk. Sounds good as I am typing it. But the consistency isn't what I am used to. At least I can have one for breakfast tomorrow. I am trying to avoid eggs at all costs. I keep thinking about those nasty coconut eggs I made last week! Tomorrow we are going to a Galaxy game to watch Beckham play.... I will have to try and pack some snacks. I'm not ready to give up my cheat meal for the week just yet. And I certainly am not wasting it on nachos or a hot dog!

Day 11 Breakfast

I just got off the scale and I'm down 5 lbs. from my initial weigh in! Woot! Woot! This morning I put some turkey on romaine leaves with some of my new Vegan Caesar dressing. Delish! I also brought a peach and some trail mix to snack on. I actually am liking this diet. Kim, I know I just made your day :) xo

Day 10 dinner

After work I went to Whole Foods Market and bought a few treats. I'm most excited about my Vegan Caesar Dressing. I tried it out with a few cocktail shrimps. Then I hd some leftover spaghetti squash. I attempted to bake something with the coconut flower I bought. Blehhhhh! Not so good. I'm gonna check out my new recipe books now. Goodnight!

Day 10: Breakfast and lunch

Since I had to sleep that extra 15 minutes, I didn't have time for breaky this morning. I had a small bag of trail mix. By lunchtime I was ready for something good to eat. So I splurged and went to Los Golondrinas. I ordered a chicken fajita burrito (minus the tortilla) and a side of guac. When I got back to the office I put this on top of a bed of romaine with some salsa. So yummy... And I still have half of the fajitas leftover for another meal! I have some blueberries that I will prob have for dessert :)

Day 9 Dinner

I'm sorry my pictures aren't better! I'm too lazy to bust out the canon and have resorted to my crappy iPhone pictures. For dinner I had my favorite spaghetti squash with ground turkey pasta sauce. And for dessert: a box of blueberries. I had a lot of fruit today, but oh well! Dreading breakfast tomorrow. Not sure what I'm gonna do yet...
