Day 9 Dinner

I'm sorry my pictures aren't better! I'm too lazy to bust out the canon and have resorted to my crappy iPhone pictures. For dinner I had my favorite spaghetti squash with ground turkey pasta sauce. And for dessert: a box of blueberries. I had a lot of fruit today, but oh well! Dreading breakfast tomorrow. Not sure what I'm gonna do yet...

Day 8 Dinner

I wasn't super hungry for dinner because I had some trail mix late in the afternoon. So I just had a sweet potato with a drizzle of honey and some cinnamon.

Day 8 Lunch

For lunch I cooked up some shrimps with lime juice and served it with half an avocado. After that I had an apple with sunflower butter.



Jadon and I went to the beach afterwards and when we got done I was really craving a snapple. I went to Rite Aid to see if they had anything that would work for me and found these Izze sparkling water with fruit juice drinks. So yummy. Probably not something I want to drink everyday, but a nice little treat.

Day 8 Breakfast

Poached eggs with ham and tomatoes! Out of all of the meals, I'm having the hardest time with breakfast. Would like to have a few days off from eggs. Any suggestions Kim?

Back home, back on track

Just got in from Vegas this afternoon. It was pretty much impossible to stay on the diet while there. But I did have a lot of fun!!!



Ok so here is my confessional:
Subway, chips, shoestring fries, wine, chocolate cake, more wine, pizza with ranch (I know), bagel and cream cheese, margaritas, chips, beer, green chicken enchiladas, an In-N-Out burger. Wow. It's crazy how much crappy food you eat when you are not paying attention and making an effort.

But, when I got home I made a trip to the ranch market and the grocery store to get back on track. Today is day 7!!! So for dinner I made a recipe that I stole from a Barefoot Contessa cookbook. I use the term "stole" because I literally stole it. I was browsing the book in Costco a while back and took a picture of the recipe without buying the book :)

The menu:
Roasted salmon with green herbs
Salad with cucumber and avocado



This salmon recipe is so good and super quick. Just mix some olive oil and lemon juice and pour it over the fish. Then sprinkle with a little pepper and kosher salt. Chop up some green onions, fresh dill and fresh parsley. Cover the salmon with the herbs. Pour some white wine over it and bake for 15-20 minutes. I know cooking with olive oil is not ideal, but it is allowed. Right?

To make this work for Jadon I just added some 12 grain bread with a pat of butter. He seriously loved this dinner and asked for seconds. It made me happy for two reasons. 1. He actually thought the food I cooked tasted good and 2. It was mostly a paleo meal for him. Healthy and easy.

It was nice to have a little break from this strict diet, but I'm actually excited to get back to it!

Day 4 breaky and lunch

This morning I opened my package of sunflower "bread." It was made of sunflowers seeds, veggies and herbs. Seriously, NASTY! I tried one bite then opted to have my sandwich protein style. So for breakfast: pastrami, avocado, tomato and lettuce. Morning snack: a few plantain chips. Lunch: leftover spaghetti squash pasta from last night. Jadon just got back from science camp and asked if we could go to dinner tonight. This should be interesting :) it will be my first time eating out since I started this thing! Stay tuned...

I slept 9.5 hours last night! I so needed it. I also weighed myself and I am down 2 lbs. Was in kind of a rush this morning so here is my breakfast: hard boiled egg, pastrami and melon. Feeling better today :)

Day 2 Dinner

I scarfed this down when I got home from work then took a little power nap to try and get rid of my headache. Must be the sugar withdrawals :) Carnitas, butter lettuce, cilantro, avocado, salsa and lime juice. I have to say... Lime juice is my favorite "dressing." So yummy. This meal didn't really feel like a "diet meal" because I love me some mexi food. After the salad I had a spoonful of sunflower butter and a few roasted pumpkin seeds.

Day 2 Lunch

For a snack I had some beef jerky and a few plantain chips. Lunch: leftovers from last night spiced up with some italian dressing. This is going to be a LONG 50 days!!!! I may have to tap into my sunflower "bread" tonight. I wish they made sunflower tortillas. Hmm. Maybe I can have tacos and just use a lettuce shell :)

Day 2 Breakfast

2 Eggs with salsa and avocado. I whipped a little coconut milk into the eggs and cooked the eggs in coconut oil. Bleh!!!! Not a good combo. I'm going to have to stick to olive oil for my eggs. And maybe not scramble them. Because coconut eggs are nasty. You learn as you go!

Afternoon snack

I was craving something sweet... Like candy. I guess an orange will do.

Day 1: Lunch

Salad with onions, cilantro, avocado, cucumber, all natural pastrami, and Italian dressing. Too much, couldn't finish it all! I went to Trader Joes during lunch. So many things there that I can't buy!!!!!

Morning snack

Roasted seaweed. Not very good but only 30 calories for the whole bag. Reminds me of sushi which is always a good thing!

Farm to Market to Me... And the Last Supper



I just got back from Farm to Market in San Juan Capistrano. I love this place! I walked out with a TON of veggies (eggplant, artichokes, yams, peppers, etc., etc.) and some fruit and it was only $20! I have a feeling I will be spending a lot of time here.



On the way home I stopped at Stuft Pizza to pick up a small cheese pizza and a root beer for my last supper. Cheese and bread are both big no-nos so I figured I should kill two birds with one stone. I was a little sad when neither the pizza place or the drug store next door had root beer, but c'est la vie. Anyways, the pizza was just okay. I'm lying, it was pretty good.

So tomorrow is the big day—Day 1.

On the Hook

Today I got suckered into joining my brother and sister on the Paleo (aka caveman) diet. At stake: $400. All I have to do is stay committed for 50 days (minus 3 for my upcoming trip to Las Vegas).

What’s the Paleo diet? In a nutshell, it’s a simple way of eating how we were genetically meant to be eating. It’s how our ancestors, the Paleolithic people ate. Nothing processed. No grains. No legumes. No dairy. Tons of fresh vegetables and fruit. Healthy, unprocessed fats, like avocado, olive oil and fish oil. This is a pretty strict diet but seems manageable. I think I will miss cheese, chips and rice the most. However, I am allowed one "cheat meal" a week. I will definitely be taking advantage of that!

Tomorrow will be my last day of freedom. I'm planning pizza for dinner :)
