Just got in from Vegas this afternoon. It was pretty much impossible to stay on the diet while there. But I did have a lot of fun!!!
Ok so here is my confessional:
Subway, chips, shoestring fries, wine, chocolate cake, more wine, pizza with ranch (I know), bagel and cream cheese, margaritas, chips, beer, green chicken enchiladas, an In-N-Out burger. Wow. It's crazy how much crappy food you eat when you are not paying attention and making an effort.
But, when I got home I made a trip to the ranch market and the grocery store to get back on track. Today is day 7!!! So for dinner I made a recipe that I stole from a Barefoot Contessa cookbook. I use the term "stole" because I literally stole it. I was browsing the book in Costco a while back and took a picture of the recipe without buying the book :)
The menu:
Roasted salmon with green herbs
Salad with cucumber and avocado
This salmon recipe is so good and super quick. Just mix some olive oil and lemon juice and pour it over the fish. Then sprinkle with a little pepper and kosher salt. Chop up some green onions, fresh dill and fresh parsley. Cover the salmon with the herbs. Pour some white wine over it and bake for 15-20 minutes. I know cooking with olive oil is not ideal, but it is allowed. Right?
To make this work for Jadon I just added some 12 grain bread with a pat of butter. He seriously loved this dinner and asked for seconds. It made me happy for two reasons. 1. He actually thought the food I cooked tasted good and 2. It was mostly a paleo meal for him. Healthy and easy.
It was nice to have a little break from this strict diet, but I'm actually excited to get back to it!
